Ingredients:
**For the Cake:**
* 3 ripe bananas, mashed
* 2 cups all-purpose flour
* 1 cup sugar
* ½ cup unsalted butter, softened
* 2 eggs
* ½ cup sour cream or plain yogurt
* 1 tsp baking soda
* 1 tsp vanilla extract
* ½ tsp salt
* ½ cup chopped walnuts
**For the Cream Filling:**
* 1½ cups milk
* ¼ cup sugar
* 2 tbsp cornstarch
* 2 egg yolks
* 1 tsp vanilla extract
* 2 tbsp butter
**For the Topping:**
* 1 banana, sliced
* Whole walnuts
* Optional: vanilla glaze or cream cheese frosting
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
2. In a bowl, cream together butter and sugar. Beat in eggs, mashed bananas, sour cream, and vanilla.
3. Mix in flour, baking soda, and salt until just combined. Stir in chopped walnuts.
4. Divide batter evenly between pans and bake for 30–35 minutes, or until a toothpick comes out clean. Cool completely.
5. For the filling, whisk milk, sugar, cornstarch, and egg yolks in a saucepan over medium heat until thickened. Remove from heat, stir in vanilla and butter, and let cool.
6. Layer cake with cream filling between and on top. Drizzle with glaze or frosting if desired.
7. Decorate with banana slices and whole walnuts just before serving.
